Nice work Moon - 2's a cracker!
If you feel up to it, try increasing the levels a bit more on the 3rd one (bring the right hand slider in a bit).

#1 is the choice for me 
Have you tried just selecting the bird and adjusting the levels on that rather than the whole pic?
I find using a level adjustment layer and then using the layer mask to just adjust the bits I want a good way of selective adjusting levels.

Nice edits Moonie. I would be interested to see the edit of the tufted titmouse after it had been passed through some noise reduction software. The adjustments you made seem to have brought out the noise unfortunately.

Like them all, but I'm not sure abotu the first one, the eyes look like bug-eyes if you get me, perhaps they're too sharp? Ooooh... a dirty statement there!
