Then a couple of months later, I went back to the second race at that track, setup my stall (I printed loads of shots, the best 70 or 80) and shot them out for a fiver a go, I sold quite a few, made the day well worth while.

Sounds like a good way to go about it 
Maybe an alternative (if you didn't want the initial outlay of priniting 80 odd pictures) would be to take the shots on the first go, and then take a laptop to show them on the next meet... and then take orders? Maybe have a few examples printed out so they can see the quality?
I reckon there's a market for this type of thing - especial with this youtube/myspace generation, everyone loves their own pics
(or at least love good pictures of themselves)
