Going back to old captures to reprocess them can be very educational. There's no one way to process an image. There's so much information in a RAW file that there are countless possibilities captured there. It's one reason I keep all my RAW files as "negatives" of the original capture.
Your experiment is very fascinating Phil & worthwhile. It may change your photographer's "eye", opening new avenues for creativity. Keep up the good work.

As i'm into monochrome i do prefer the mono edit and also think the exposure in the 3rd works best.

I find Modern Marmite the most appealing. It's not bad in a sandwich either.
