While that may be your opinion it's highly illegal - and I'm not sure something you should be advising people to do Regardless of my personal opinions on the matter, it's probably not wise to advertise the fact that you do this yourself, or to tell others to do it!

If you shoot in RAW, setting the B&W on still means you can switch back to colour (well that worked on my 30D anyway)
The best way to convert to mono is to use the Channel Mixer, tick the 'Monochrome' box and you can adjust the RGB values without using layers. The tool also has presets for you to try out if you are not sure where to start.
