Vegan Dish - Moroccan Style Turnips





As some of you may know I've been considering becoming a Vegan (although technically it was my 3rd day today!) and here's todays dish, which is just turnips fried in coconut oil, onions, garlic, lots of paprika some cumin and a little bit of M&S tagine paste (which I am trying not to use - so will get some chilli powder or something else for next time) ..served with wholemeal cous cous.

It's forcing me to cook more exciting stuff, so I'm enjoying it at the mo

Ok here's what I had from yesterdays left-overs





I used a pack of mixed beans from Waitrose. Put them in the fridge to soak last night, but when I looked today half the water was gone! So topped it up and left it out in the kitchen for around 4-5 hours. Hope that was enough!!!! ...out of all the dishes so far think this was my fave - as it wasn't so spicy but just enough to make give it some flavour.

I fried some more onions, more garlic, added some paprika, salt, pepper, then when that was cooked added yesterdays left over. Then added the cooked beans which I had already boiled for 10 mins, then simmered for around 30 (prob longer). Then added it to the mix and simmered for about half hour (added a bit of water and some more garlic too).

Lets hope I didn't give myself food poisoning

These pics were taken with the Nikon D40, no flash and just a monitor and 2 fairly low light lamps for light. The biggest obstacle is holding the camera still as the shutter speed is a little longer in these conditions.

I have to say, as a meat eater I'm not that interested in your meal.

What does interest me however, is that these are the first pictures I've seen you post in AGES, and I miss seeing your stuff.
