They do different things depending on what you're shooting Wibbs

Single area will focus on one spot, Dynamic will 'track' (great for sports/paparazzi!) and closest will focus on the closest (I think! Don't think I have that on mine).

It should go more in depth in your manual - the Nikon manuals are actually really good (least my d40 and d300 ones were!)

As above. Mine are set to AFs usually - for macro on the odd occasion I use AF at all! For birds AFc helps

Re: Autofocus Options - What are yours set to?

I agree with Azz.

It really depends on how much your subject is moving.
AF-S = One time AF; if you press the shutter half-way or AF-ON (i'm not sure the D70 has the AF-ON) button, it'll find it's focus one time and will hold that focus until you re-press that shutter halfway
I use this most of the time, i compose, focus once, shoot. I use this for landscapes, scenes, portraits, and most stuff i do

AF-C = Continuous AF; if you press the shutter half-way, it'll find focus, and if you move (or subject does) it will keep finding focus continually.
I use this for movement like action, sports, little kids.

AF-A = Camera chooses between AF-S and AF-C <-- don't know if you have this option

I like Single Area AF, because I can choose the area to grab focus from with my D-Pad. I use this the most, and it is especially useful with shallow DOF photography. Dynamic is great for when you're shooting events/parties, movement, etc, allowing you to grab what is in motion. This allows you more latitude in focusing WHILE you're composing your shot--ie. it's great on the fly, and when used in conjunction with AF-C.
